About Kathy

Real food, real life, and a whole lot of starting over.

I built Unprocessed Living because I was tired, overwhelmed, and done with “perfect” health advice that didn’t fit my actual life.

Between managing Hashimoto’s, running a household, and trying to keep everyone fed on a real-person budget, I found myself frustrated with influencers who made everything look effortless—and impossible.

So I started over. Slowly. Imperfectly. And one swap at a time.

My Story

It started with exhaustion.

Hashimoto’s, brain fog, fatigue, and feeling behind on life—it all stacked up until I finally cracked.

I hit a point where I couldn’t keep pretending I was fine. I didn’t have the energy for complicated meal plans, color-coded binders, or influencers telling me to “just meal prep harder.”

I needed simple. I needed honest. And I needed something that didn’t fall apart the moment life got messy.

So I started making small, doable real-food swaps. I cleaned up my pantry slowly, learned what ingredients actually meant, and built meals that supported my energy instead of draining it.

That journey became Unprocessed Living—a space for real people doing real life, one small step at a time.

What I Believe

My core beliefs about food & health:

  • Real food shouldn’t require a second job.
  • Perfection is the enemy of progress.
  • You’re not imagining the ultra-processed overwhelm.
  • Small changes create the biggest shifts.
  • You deserve to feel good in your own life again.
My Approach

Real food for real life.

No diets. No guilt. No 47-step routines. Just calmer choices that give you energy back.

My approach is simple:

  • • No “good vs bad” food shame.
  • • No extreme elimination plans.
  • • Meals that work for families and budgets.
  • • Pantry and grocery swaps that actually stick.
  • • Grace, humor, and real-life flexibility.

A Few Things I Love

Just so you know who’s behind the apron.

These are the little things that make me, me.

  • Cooking videos with real-life messes behind the camera.
  • Cozy routines that don’t require a personality transplant.
  • A clean pantry (even though it rarely stays that way).
  • Good coffee and calm mornings—when they actually happen.
  • Making real food feel doable, not intimidating.
  • Learning weird ingredient facts no one asked for.
  • Helping women feel like themselves again.
